Like people, fruits and vegetables are mostly water. If left unchecked, the moisture within them will escape into the air. To prevent this, you need to convince your produce that its connection to the earth isn’t finished. The key is to maintain high humidity levels in your storage area—ideally between 90% and 95%.

In many regions, damp air is naturally prevalent. However, in drier climates, keeping your root cellar sufficiently humid can still be manageable with a few reliable techniques at your disposal.
